In a relaunch the most important thing is not to lose what works today. To do that, you redirect every old address permanently to its new counterpart, save content and contact routes and check the new site's loading time. Then you submit the new sitemap to Google and check that redirects and forms work.
What happens to the old addresses?
Google recommends mapping every old address to its new counterpart and redirecting it permanently, server-side with the status codes 301 or 308. The redirects should stay in place for as long as possible, generally at least one year.
Without a redirect visitors and search engines land on an error page, and whatever visibility the old page had can be lost.

Which content should I save beforehand?
The pages visitors and enquiries come through today, all texts and pictures you hold the rights to, the forms and their recipients, and the legal notice and privacy policy.
Also make a list of all old addresses. It is the basis for the redirects.
How do I know whether the new site is fast enough?
Google measures this with the Core Web Vitals. Good means: the largest content has loaded within 2.5 seconds at most, the page responds to an input within 200 milliseconds at most, and the layout barely shifts, with a score of 0.1 at most.
It is measured at the 75th percentile of page loads, split by mobile and desktop. So do not test only on your own fast computer.

Does the new website have to be accessible?
The German Accessibility Strengthening Act (BFSG) applies among other things to services in electronic commerce, meaning websites through which consumers can conclude a contract, such as a purchase or a booking. Micro-enterprises that offer services are exempt. These are businesses with fewer than 10 employees and an annual turnover or balance sheet total of no more than 2 million euros.
Whether the act applies to your site is a question for the individual case; this text is not legal advice. Readable contrast, alternative text for images and keyboard operation help every visitor anyway.

What has to happen after go-live?
Submit the new sitemap in Google Search Console and remove the old one. Spot-check old addresses and see whether they redirect correctly.
Send every form once and check that the message arrives. In the weeks after, watch whether pages drop out of search.
